Amino acid
An amino acid is an organic molecule containing an amine group and a carboxylic acid group attached to a central carbon that also carries a variable side chain. Twenty standard amino acids are encoded by the genetic code. Their side chains differ in size, charge and polarity, which determines how a peptide folds, dissolves and behaves analytically.
