# Hydrolysis

Hydrolysis is the cleavage of a chemical bond by reaction with water. Peptide bonds can be hydrolysed by strong acids, strong bases or protease enzymes, breaking the chain into smaller fragments. Total acid hydrolysis, typically with 6 M hydrochloric acid at about 110 °C, is the first step of amino acid analysis used to quantify peptide content.
